If you have the full XFree or MetroX, you should be able to pick it.

Should be, but I always had trouble getting 16 and 32 bit color depth in
XFree, though it is doable. The high res stuff is automatic
There is a key combo you press to switch through the resolutions.

Yes, more ram = higher resolutions and more colors. 800x600x16bpp = 1MB,
800x600x32bpp = 2MB, 1152x882x16bpp = 2MB, 32bpp = 4MB, and so forth.
