I found Rusty's How To just a bit thin. When I set up my NAT, I used the IP Masquerade How To more than anything.

Post up if you have any questions, I've got my nat box sitting right here and I could probably answer any questions. Also, I don't think either guide mentions this, but if you are a networking newbie, the best tool for testing is tcpdump, which is simple packet sniffing tool. If you have any problems, read the man page and then fire up tcpdump, it's wonderful being able to see exactly what's going on in the network.
