Is there a simple way to run up2date for "everything"?
I dont know where to start to get the "lists" you people are talking about...
and kernels? whats their fudging names?

The default up2date configuration is to skip kernels. From the command line, add --force when doing kernels. I always update everything excluding the kernels, and do just a --force on the kernel last.
I have no idea how it's done from the GUI - I don't do Linux GUIs.
