Neither sendmail nor any of the other updates "closes" your POP3 port.

Are you sure you installed an iptables-based firewall script? The
older ipchains would be normal for Red Hat Linux 7.x. Show us the
output of the command "iptables-save"! Show us a connection attempt
with "telnet servername pop3"!
