One of the things to really, really watch out for is the printer.  Go to
http://www.linuxprinting.org and make sure the printer is supported.
Many printers these days are "winprinters" and *only* print using
Windows drivers.

Check out the Staples deals to see if that works.  They're pretty cheap
and they've got packages that include the printer and monitor.  There's
a $150 instant off and a $50 mail-in rebate.  A 17" monitor doesn't go
for much over $100 or so if you pick them up locally, and printers are
pretty cheap too.

Most of them work.  I've already built two from scratch but find that
ordering the low-end ones are cheaper if you don't mind everything on
the motherboard and no upgradability.  I learned a lot building my own,
and for an ideal system I would do it again, but you do pay a bit more.
Not as much more for Linux, but a fair bit more if you end up running
Windows.
