I looked at your config files and I don't see any problems.
I've had a problem with RedHat 8.0 on several machines where the network
interfaces are detected and the modules are loaded and the config files
are all in place, but for some unknown reason, during the install they
are in a "de-activated" state.
Can you look in /etc/sysconfig/hwconf and find the paragraph of lines about your network cards. See if there is anything there about "detached" or "deactivated" or "disabled".
If so write back. I don't remember exactly what I did to fix the problem, but I think that I copied /etc/sysconfig/hwconf to /etc/sysconfig/hwconf.install and then deleted /etc/sysconfig/hwconf and
reran kudzu and followed it's prompts, then I ran "neat" (in X-windows)
and made sure that all the options were set reasonably. (Activate on boot comes to mind).
Don't give up, and write back to the list, somebody else may have better
help.
