That won't work as the association between apps and documents is based
on the creator code, which is the same across different versions of an
application (as it should be). If there is more than one copy of the
same application around, which one will be started by the Finder when
you double-click a document isn't well defined. And there is no way REAL
Software could change that.

Apparently, Apple doesn't expect you to have more than one version or
copy of any app around, so that's the safest way to deal with that problem.

You could also change the signature of all but your primary version of
RB. The other versions would still open project files by drag-and-drop
or File/Open, but the Finder will ignore them when you double-click a file.
