The soak time you're giving it is infusing a huge amount of caffeine  
into the beverage. That's an amphetamine habit ... ;-)

I'm really not into the caffeine buzz, I'm looking for flavor. I do  
the drip coffee with a "by eye" metered amount of beans into the  
grinder based on experimenting to get the flavor I want, the drip  
machine is a Krupps Aromatica of one generation or another.

The amount of beans depends on the kind and roast ... I switch  
between Harrar, Tanzania Peaberry, Kona from a local roasting  
company, and a house blend from my friend's roasting company across  
the bay, depending upon mood.

Normally, I don't brew my own espresso (have an old Italian style  
double-decker espresso pot for the rare occasions, inherited it from  
my grandfather 38 years ago... :-). The local Starbux, a 10 minute  
walk, does "ok" on their espresso, but a new indie cafe about four  
miles away in Mountain View has superb espresso. It poses a nice  
occasion to get on the bicycle and ride there, have a cup, and ride  
back.
