IIRC you have to go through the printer installation process a second time, and choose the "roll paper" version. This will set up the roll paper option as if it were another printer, which you then choose when printing to roll paper. When printing, just set up a custom paper size with the width of the roll and the length of your print plus a small margin for handling. I set the margins to zero and manage everything from Photoshop. Don't be tempted to use the borderless driver with this, as it screws up the resulting print dimensions.
