Provided you don't overexpose a ton stops, unprocessed  RAW files still have 
the data, and the (supposed) overexposed highlights are not really 
overexposed. Just develop them for the proper sensitivity and the trick is 
done. Even better, you can develop highlights for lower sensitivity and dark 
areas for higher sensitivity, achieving an exposure latitude only digital 
can give you.
