That's true, Bob.
But you are missing out good old techniques to increase contrast by
underexsposure/overdevelopment and decreasing contrast by
overexsposure/underdevelopment.

If you are learning exposure, these manipulations (hell, any manipulations other than exposure) need to be eliminated.
If you start varying the processing, you have no way of knowing if your results are from exposure manipulation or processing manipulation.
Bob's right about slide film, it's the best way to learn exposure.
If you are going to learn on black and white, you need to figure out some darkroom procedures first, since black and white film exposure methods start in the darkroom.
