in Photoshop 7, once the highlight is gone, it's gone. same with shooting JPEG. the Pentax PhotoLaboratory software may have a small amount it can get back by reducing the exposure compensation, but it has little ability. in Photoshop CS Camera RAW, you can generally count on between 1/2 and 3/4 stop of headroom to recover highlight detail. eyeballing it though, i think there isn't any much detail to recover.
