1. Usually Av with exposure comp as required for daylight shots. So long as the shutter speed is high enough for image movement across the film plane, it's usually irrelevant, but aperture determines what will be sharp.

Manual (usually from experience, but occasionally from meter) for night shots where light sources are in the picture (and they usually are).

2.    Mostly film, minor digital for work.

3. Yes. I put the dinky little thing in program mode, point & click. - because I don't really care so long as there is an image.
