Even worse, I think that zfs will refuse to use the disk if its underlying sector size does not match the current vdev.

It should be possible to purchase 512N drives (vs 512E where E = "Emulation") for a long time, but it is necessary to be cognizant of what one is buying. Besides zfs, the BIOS may care about this.

When considering boot drives, don't buy larger drives than you need (boot drives should be for booting and data drives should be for data), but also be aware of small drives on the market which are basically rotting junk because they are so far behind the technology curve.
