You could either disable the default chroot to /var/www or mount the
partition

Indeed, that sounds like a reasonable solution for the foreseeable
future.
Not perfectly clean but does the work, and I can use symlinks in the
/mnt
folder to keep my hierarchy seamless:
srv$ ls /mnt
bin bkup fam git mdia pvt trt
Perhaps I can even go as far as to make /mnt a symlink ?
