I would recommend the USB device Griffin iMic. Its cheap, and is compatible
with OS9 and OSX, and comes with software to record and split LP's and
cassette into MP3 audio.

The software route:
You could use the classic app SoundJam (which was the precursor to iTunes)
and the line-in port hooked up to your stereo. SoundJam does not split album
length MP3's into individual tracks though.

If you read the page referred to carefully, you'll see that the iMic does not come with any software.
You can use SimpleSound or iTunes under OS 9.1

Other software you have to buy separately. (I didn't get any sw with mine!)
