I understand the frustration with how random the issue is, I've been there before. I can only recommend:
* Avoid docks if you need to drive high bandwidth displays. * Have other brands of cables on hand to try. Including a direct USB-C to DisplayPort cable. * Try fewer monitors. You should be able to test things slowly: 1. Laptop works perfectly by itself with nothing connected. 2. Laptop works perfectly with one monitor directly connected. 3. And so on.
