This is deliberate, because AppStream only shows software that has AppStream Metadata, and Discover is an "app store", not a general purpose package manager. What does `appstreamcli search thunderbird` show for you? If Thunderbird is missing from the output there, it's a bug somewhere with the distro or the local AppStream metadata configuration.
