The file extension cant change, the extension is important to determine quickly
the file type.
Without this  extension, the file becomes just a text file, without any meaning
to the system.
FYI those files are defined by this specification:
https://specifications.freedesktop.org/desktop-entry-spec/latest/

One think we can do, is make this extension less visible, perhaps making the
extension grey, or hidding it, and making it act more link a symbolic link.

If you want you can instead create symbolic links, that won't use the .destkop
files, you can use "Define a link to a file or folder" instead.
