While doing further research I found that this may be related to accidentally
installing the SDK with sudo or root. I don't think that's what I did, but I
decided to reinstall anyways, and now it works just fine. I'm closing the issue
as "not a bug" since it's probably an issue on my end of how I was
installing/running the flatpak.
