Which fields? Which JabRef configuration?

Here, everything works finde :)

When? What do you do?

Where do you see that? I just created an "InBook" entry and in the
BibTeX source, everything works fine.

Attached the configuration of "InBook" in my JabRef. I have the
buttons "Ok", "Apply", "Cancel".

Currently, "Ok" doesn't work here.

As far as I know, this affects only the UI, not the database itself.
It will be kept as is.
