Currently there are a fair number of tests for running the Solr docker image,
however none of them actually test running the prometheus exporter from within
the image.
This should spin up a solr container as well as a prometheus exporter container
that collects metrics from the solr container. Check that the metrics endpoint
is available and sends back results.
