Can you share a stacktrace if you are sure?  If your URP correctly removed the 
field from the SolrInputDocument, it'll never be "seen" by the schema in 
DocumentBuilder which is probably where such an exception might get thrown by.  
Perhaps there may be some earlier URP that consults the schema but not normally.
