Review Comment:
   One of the main reason for introducing the `engineSchema` to the 
WriterFunction is that it could drive the decision how to write out the 
variants if they are already shredded in the engine data.
   
   I understand that in this case we don't have variant in the engine schema, 
but we would like to decide dynamically how to shred based on the first few 
input records.
   
   What if we create a ShreddedWriter which just collects the data, and don't 
create the underlying writer yet. Then based on the collected info and the 
properties based on the `ModelWriteBuilder.set` creates the underlying writer - 
writes out the records and then continues delegating the write. Could this work?
