According to the docs it says you should put the zip in the "plugin" directory? I'm not sure what that is though. I think we should have some more explict directions here. IE Take iceberg-kafka-connect-zip-#version.zip and put it in the kafka-connect//lib/plugin/ directory on every node running kafka connect.
