Wouldn't it make sense to extend the current method which extracts the theta sketches to also extract the rest of the statistics by enhancing the select expression [here](https://github.com/apache/iceberg/blob/7172760101984045245a3e759e601a060dbcc3b5/spark/v3.5/spark/src/main/java/org/apache/iceberg/spark/actions/NDVSketchGenerator.java#L99). My thinking is that instead of having a custom code for generating the min/max we would rely on spark pushing it down to iceberg. Also since we already pay the cost of generating the NDV stats it doesn't seem to like the overhead will be much. Any thoughts?
