@jbonofre other projects (like kafka connect) are using the [GenericAppenderFactory](https://github.com/apache/iceberg/blob/1288eb8e33304e2c5dbf7ea78de9f51f422cfad1/data/src/main/java/org/apache/iceberg/data/GenericAppenderFactory.java#L46-L45), which is already public.
