Depending on the number of users you are dealing with, a 'client-side'
migration might be your best bet.
Take this approach:
1. Setup your Exchange server, make sure that everything is fully tested.
2. Make changes to DNS for your domain MX records to point to the Exchange
server.
3. After mail is getting delivered to the exchange server, temporarily
configure Outlook to connect to Exchange server and to Cyrus server (Outlook
does function as an IMAP Client too). Move all the email (and folders) to
exchange hierarchy.
Obvious issues:
#1 Servers have to have different names and separate hardware
#2 Very painful for more than a couple dozen users
#3 Depends on users (or someone with a lot of time) to do a manual
migration.
#4 Outlook is going to be client used for connection to Exchange. Although
Exchange does support IMAP, so any client could be configured to connect to
both servers using IMAP and migration could be done that way.
