I believe that's called downgrading!

Assuming Exchange supports IMAP, you could simply use a client to copy 
server to server.  And if it doesn't, you're probably up a creek since 
Microsoft doesn't tend to support any standards except standards they 
define (ie., the whole world should do it their way),
