I tried the following remapping:

Which didn't work.
Therefore, I assumed that since all my other remappings work, there's some
limit against remapping email addresses which use the + extension.
That's fair enough though, as one could argue that the email address still is
[EMAIL PROTECTED] from Postfixs point of view, and thus the match getting done
against [EMAIL PROTECTED], since postfix is aware of the extension to the email
address.
Just to help avoid confusion about the setup let me mention that the email is
handled by a catch-all entry in the virtual user file:
@elde.net [EMAIL PROTECTED]
[EMAIL PROTECTED] being the email address which is considered the "primary"
for my mailbox.
