That's a known bug in luaotfload
(https://github.com/gregorio-project/gregorio/issues/1188) that is
present in the current release (v2.7-fix-3), but not in v2.8-rc1 and
later. If you can, upgrade luaotfload. If that's not possible, then
you'll need to backtrack to TeXLive 2015 to compile the documentation or
use the work around which Henry figured out:
