Dear Michael, I'm affraid this is not really a gregorio bug, it seems more related to the TeXLive/Python packaging for Mac OSX. Maybe you could create a minimal working example showing the problem (without gregorio, just using the minted package in a document should expose the bug) and report it to MacTeX? (https://tug.org/mactex/support/emailform/index.html)
