could you try with a conditional mapping, something along these lines:
if_then_else(isNull(DATETIME_FIELD),
Expression.NIL, FormatDateTimezone('yyyy-MM-dd''T''HH:mm:ss''Z''',
DATETIME_FIELD,
'UTC'))
