The imagemosaic JDBC plugin would be ready for this. Look here how to  
implement an additional plugin.

Postgis raster is on my TODO list but I deferred the implementation until

a) concrete requests appear on the mailing list.
b) We have a strategy how to merge our two image handling modules.

a) has happened, b) is pending.

An implementation including test cases and documentation needs about  
2-3 days, the earliest point in time would be after finishing GSOC  
2011, end of August.
