According to your headers, you're using Zimbra.

(for the desktop client), Zimbra can be configured to insert angle brackets when
quoting, though it doesn't seem to be completely clear on how.

Why? I do it, when I have to use that sort of E-mail client (e.g. Outlook or
GroupWise). It's a pain, yes, but IMO actually sending mail with that sort of
quoting would be worse.

While true, it has the advantage that it doesn't risk confusion over
attribution, at least not in the same way. I'm not entirely sure which of the
two I'd prefer.
