As Daryll said, the GL redbook is a good choice. I figured I'd comment
specifically because I'm a firm believer that Amazon should DIE DIE DIE.
*ahem* Here's the book from fatbrain (owned by Barnes and Noble, but a
nicer format than bn.com):

Another one that looks interesting:

I don't have this one yet (it's in the mail though!) I know it covers
OpenGL at least a little. It also covers SVGALib, Simple Directmedia
Layer, OpenAL. I don't know if it covers X11 or GTK or anything else in
that category since one book really can't cover EVERYTHING but from what
I've heard it's at least a good book to have.

After awhile working with OpenGL, you'll probably want this:

That's the good ol' blue book. There are also white (wgl) and green (glX)
books, but you probably won't need them. The blue book documents glX
calls and who cares what's in the white book? ;)

Last but not least,

This is probably going to be the hardest to directly apply to whatever
you're doing, but is probably going to help more in the long run than even
the venerable Foley book. It's worth checking out, but it's spendy and as
I said, it might not be directly applicable to anything you're doing. If
you're interested in indirect applications, it's chock full of them.
