You must be mistaken about Empathy not supporting proxies, since it wouldn't have worked for me behind a firewall otherwise, but I was using it for a time (before upgrading to 11.10) with several outside resources like Google Talk and Facebook Chat. I'm also sure I didn't do any special steps to set it up.

Other software like Chromium works correctly. I've double checked the proxy settings in System Settings -> Network -> Network proxy and also in dconf -> system -> proxy, and also in gconf-editor -> system -> proxy, and the everything seems correct.
