Yes, it is possible and I currently make use of this by running Linux 6.1 to work around a still unresolved bug that blocks me from using anything 6.8+ <https://bugs.debian.org/cgi-bin/bugreport.cgi?bug=1112238>

I did it by adding bookworm to my sources.list in addition to the current trixie release. This makes the old linux images readily accessible for installation using apt.

I think the even more correct way to do this would be to setup APT pinning to avoid installing the newer kernels. Upon update, it currently always proposes to install the most recent kernel from stable which breaks my system due to the bug, but so far I haven't done anything to prevent this yet besides working on the updates most carefully...

Hence I, too, are curious about better solutions.
