Are you sure you require a separate /boot/ filesystem? Are you confusing ESP
partition with /boot/ partition? 500MB is grossly oversize for most ESP usage.

Installation size is not equal to size required by a separate /boot/ filesystem.
Most of the installed size in Bookworm or Trixie is in /usr/lib/modules/ on the 
/
filesystem.
