Here are the relevant pages [1] [2]. In a nutshell, it *should* work. But you lose the automatic DST change -- the OS expects then the HW clock to be "right" wrt local time. But -- who knows? Perhaps the hwclock is read *before* the d-i settings can be accounted for; perhaps the time will be right after installation *and* reboot?
