I think the best way to learn something is to try it. Just take the software you want to package ( or better a simple software for testing ) and start with packaging, the maint-guide should be more or less enough and if you stuck, feel free to ask debian-mentors mailing list. I think there is no guide which can cover all aspects of packaging, sometimes it is super easy as packaging of some perl modules ( thanks to dh-make-perl devs ), sometimes it is almost not possible...
