It is not much about different types of packages, but I started with http://wiki.debian.org/IntroDebianPackaging For packaging scripts and documentation I sometimes prefer to create packages by treating them as archives and adding a DEBIAN/control file, but that is certainly not the way to go if you plan to publish your package somewhere.
