If the documentation is incorrect suggesting changes to the GNU/kFreeBSD Manual would be made on debian-boot. Meanwhile you have http://wiki.debian.org/Debian_GNU/kFreeBSD_Desktop which has XFCE is the default desktop for new kfreebsd installs.
