you could use dpkg --get-selections on your target date (heck set up a cron job to run it every day or every week or whatever and just archive them) then to roll back use dpkg --set-selections followed by apt-get dselect-upgrade. provided you set things up in advance to record your selections as you go so that you have the data you need, you can easily roll back.
