Do you know about make-kpkg? It's very easy to tweak kernel parameters
using it. 
apt-get install kernel-package. apt-get install
kernel-source-2.2.18 
cd /usr/src
tar -xvjf kernel-source-blahblah.bz2
cd kernel-source-blahblah
make-kpkg --config menuconfig 

Then it will spit out .deb's for you. This is one of the reasons you
don't see a billion variants on the base kernel package, the -blah
ones are actually patched kernels.
