I suspect that when you're mounting /, you don't have a separate partition for 
/mnt,
and I believe /mnt is part of the default directory structure. Therefore it's 
getting
"mounted" as part of /, and is therefore clobbering your /mnt/redhat mount. 
It's hard
to say without having a better idea of your entire partitioning structure.

You might try creating a new mount point instead of /mnt/redhat, say something 
like
/redmnt/redhat, and see if that has any effect.
