Ironic isn't it? IMAP as a concept is great but all the IMAP servers suck in one way or another. Well if you're willing to test one more, there's a new kid on the block, dovecot. (http://dovecot.procontrol.fi/) It aims to be secure and efficient. It supports maildir and mbox, SSL/TLS, and doesn't need to be recompiled to tweak paths and other features. It even has documentation! I should warn you that it is still beta but for the most part it works quite well, especially for maildirs. (i've having one mbox related problem with my own account at the moment. Oh and it doesn't do POP3.
