Following up for the archives. It looks like reversing the order of the names in /etc/hosts and rebooting did the trick. I'm guessing that, instead of reading /etc/hostname, some daemons try to discover the hostname by doing a reverse resolution on 127.0.0.1. In any case, the machine now seems to have gone back to just one personality. :-)
