I'm not a Debian developer or a KDE expert, but just chiming in.
I had the same problem. It looks like libplasma6 now links against
libplasmaactivities7, which has a binary API incompatibility with the
previous libplasmaactivities6. However, the plugin for the system tray
(org.kde.plasma.systemtray.so, from plasma-workspace) is apparently
compiled and built against libplasmaactivities6, so it can't load.
But as for getting the old packages, you can put this in your sources.list:

That will let you install the previous versions, from the archives. You
may also want to put a hold on them (using aptitude, apt-mark, etc.) to
keep them at the old versions until the Plasma migration is complete.
(You might want to watch https://tracker.debian.org/pkg/plasma-workspace
, and see when 6.5.0 migrates to testing.) Here are the packages I
downgraded, what I downgraded them to, and their current most recent
versions (what was installed before I downgraded them):
