Hmm, interesting, though with -variant, or some similar -foo, we'd have an obvious corresponding "xemacs25-variant" if that's ever relevant... If emacs25 weren't already a binary package, that could be what we provide, but I suppose it's preferable for "apt install emacs25" to request the "preferred" Emacs variety for the host (right now, GTK+).
